Anyone else grow up listening to DC talk? I loved them, though I wasn't technically allowed to listen to them til I was in highschool. My mom thought they were too hard core or something. I dunno. haha
Sorry, that was my random thought for the day... well for now at least.
So it is now Feb 16th and we have 12 days before we have to be completely out of our apartment... and we still haven't signed a lease. eeeeh! We found one duplex that we really like (which is like 5 min from my workplace, more sleep, yah!) and one other house that we looked at tonight. That one is like 3 blocks from our church, which would be nice on like Sundays and Wednesdays, but every other day of the week I would have to be leaving my house about the time I get up right now (no, I don't put much effort into my appearance most days for work. so shoot me). The house is super cute, huge back yard, deck and a real fireplace. Either place would really be fine by me. I spose there are pros and cons either way.
Oh, I officially packed my second box last night, woot! So now I only have about 20 bajillion left to go. =) Packing is such a boring mundane task, I just can't bring myself to stop whatever else I'm doing and get it done. It's like laundry. You feel good if you can actually bring yourself to get it done, it's the getting it done...
Today I decided that I wanted to make my own granola. I've been rather addicted to yogurt of late, but all I've been eating is that Yoplait Light stuff which has soooooo much sugar. And it's aspertame sugar so it's even worse for you! Ok, so all that to say that I decided I should eat plain low fat yogurt. But that stuff tastes so blah. So I decided to make some yummy crunchy granola to sprinkle over the top and get frozen fruit to add some sweetness (it's almost impossible to find unsweetened frozen fruit!!) Anyway, following is my, I can't find the granola recipe I was given so I'm just gonna wing it granola. =)
3 cups oats
1 cup milled flaxseed
1 cup coconut (yes, I used sweetened. deal with it)
1/2 cup sliced almonds
1/2 cup chopped walnuts
~mix dry in large bowl~
1/2 cup olive oil
1/4 cup maple syrup (the REAL stuff)
1/4 cup honey
1 tsp cinnamon
1/2 tsp ground cloves
1/2 tsp allspice
~mix together then pour over dry mixture~
bake at 300 degrees for 30 min stirring every 10 min.
It still needs a little tweeking but I'd say for my first go round it turned out pretty good.
OH, and it makes the plain organic low fat yogurt totally edible. (ok, so I drizzled a little extra honey over my yogurt) yum!
i haven't listened to dc talk in forever! i'll come help you pack sometime and we can listen to all their cd's:) i think the apartment next door to us is going to be for rent if you want to come live by us newlyweds... we could be almost roommates again! haha.
